A rare combination - Green Papaya & Coriander Leaves soup is a very healthy and a refreshing soup. It is good for the tummy and has a very soothing and a cooling effect. Great to have with some croutons. Do not forget to add a dash of lime for that tangy taste.
- 1/2 papaya, chopped
- 1 bunch of coriander leaves, chopped
- 1 onion, chopped
- 2-3 garlic cloves, chopped
- 1 tsp. butter
- 1 tsp. olive oil
- 2 bay leaves
- 3 cups stock / water
- salt to taste
- 1/2 tsp. pepper powder or to taste
- coriander leaves & croutons to garnish
Heat oil and butter and temper with bay leaves. Add the onion and garlic cloves and saute till light brown, Add the papaya and saute for a minute.
Add the stock, coriander leaves, salt and pepper to taste and pressure cook for 3-4 whistles. When cool, discard the bay leaves and blend in a mixer. Heat through and serve, garnished with coriander leaves and croutons / bread sticks.
