Lemony Coriander Chicken

         
           This is a simple chicken curry with very less masala. Light on your tummy and good for kids too, as it is not spicy. You can always omit the chilies. If you want a soup like consistency increase the quantity of water. Chicken or vegetable stock can also be used.





  • 500 gms chicken on bones, curry cut
  • 2 onions, chopped
  • 2-3 garlic cloves, chopped
  • 2-3 tbsp. oil
  • juice of 1 lime
  • 1 cup coriander leaves chopped
  • salt to taste
  • 1/4 tsp. turmeric powder
  • 1/2 tsp. chili powder
  • chopped chilies, lemon slices and mint leaves to garnish



          Heat 2 tbsp. oil in a pan and fry the chicken till light brown. Keep aside. Heat remaining of the oil and saute the onion and garlic till light brown.

          Add the coriander leaves, chili powder and turmeric powder and fry for a few seconds. Now add the fried chicken, salt and 1 1/2 cups water and cook, covered on low flame till the chicken is cooked and the gravy is slightly reduced.

          Add the lemon juice and simmer for another minute. Serve, garnished with chilies, mint leaves and lemon slices. Can be had either with rice or chapattis / naan.
